
Quinoa and Veggies
Awhile ago, Lindsey shared her go-to meal, the meal she prepares when she’s worn out or in a hurry. I also have a go-to meal, inspired by one of my ballet teachers. In a nutrition workshop a couple years ago, she said “Quinoa and leafy greens are all you need” for a healthy diet. I need variety and excitement in my meals, so I don’t necessarily agree. I do agree, however, that quinoa and leafy greens are a tasty, healthy, and easy combination. Thus, my go-to meal is quinoa, leafy greens, and whatever other vegetables I have on hand.

I’m awaiting a produce delivery from Serendipity Farms, so I’ve put off going to the grocery store. Since my supplies are running low, I resorted to my go-to meal for dinner last night. I chopped up the onion, red, yellow, and orange peppers that I had lying around, and sauteed them in olive oil while cooking the quinoa.

I had a lot of veggies, so I made extra so I could have leftovers for lunches! It’s just as tasty the second time around. I mixed the vegetables and quinoa together, divided it among a few bowls, and topped each bowl with a dollop of pesto.

I made quinoa with chicken sausage,peppers, onions and garlic last night..super easy, tasty, and filling!
That sounds delicious. Chicken sausage is one food that I love, but always forget to use!
We are family…my go-to meal when I’m home alone is usually whole wheat pasta, whatever veggies I have in the fridge, and maybe some chicken or cheese if I have it, topped with a little olive oil and herbs!
