Love Those Leftovers!

Lindsey’s recent posts have been about our crazy/awesome family Thanksgiving.  I hosted this year for the first time!  It was mildly stressful, but really fun.  One of the best things about having the big meal at my house is that I got to keep the leftovers!  I’ve gotten pretty creative this week with how to prepare leftovers in new ways.  Here are some of my favorite revitalized leftover meals.

1. Plain Jane

Leftover Ham, Potatoes, and Cornbread Stuffing

The first few days after Thanksgiving, it was still exciting to have a plate of plain leftovers.  This plate shows ham with gravy and cranberry ginger chutney, cornbread stuffing** (possibly my favorite dish), garlic mashed potatoes, and a few veggies.

**We followed the Simple is Best Dressing recipe from Bon Appetit but used cornbread instead of white bread, and vegetable broth instead of chicken broth.

2. Pumpkin Smoothie

Lindsey prepared a vegan gravy for our vegetarian friends using pumpkin and white beans.  There was some leftover pumpkin, so I started blending it into my breakfast smoothies!  It’s delicious!

Pumpkin Smoothie

Serves 1

  • 1 banana
  • 1/2 cup rolled oats
  • 1/4 cup pumpkin puree
  • 1 cup milk (I use soy)
  • dash of cinnamon
  • dash of ground cloves
  • splash of vanilla extract
  • topping of your choice

Combine all ingredients in a blender.  Refrigerate overnight, allowing oats to soften and flavors to meld.  Blend until creamy.  Serve in a bowl with toppings of your choice.

My favorite toppings were coconut flakes and a dollop of Nutty Butter.  Lindsey brought 3 flavors of Nutty Butter for us to try.  They’re so fun!  I love the Apple Pie variety.

3. Turkey Salad

A good way to freshen up leftovers is to throw them on a plate of greens!  I combined spinach, turkey, stuffing, cranberry relish, and some fresh vegetables remaining from a tray of appetizers, and tossed it all with some olive oil and vinegar.  Yummy!

4. Cranberry Sauce Smoothie

We had 2 varieties of cranberry sauce this year, so there was a lot left!  Lindsey suggested using some in a smoothie, like she’d seen some of her friends do.  It was an excellent idea!  This smoothie was based off of Kath’s recipe.

Cranberry Sauce Smoothie

Serves 1

  • 1 banana
  • 1/2 cup cranberry sauce
  • 1 cup milk or milk substitute

Combine all ingredients in a blender and beat until smooth.

5. Cocktails

Another great thing about the family coming to town is they stocked my liquor cabinet!  They also left me with some homemade simple syrup.  I’ve had fun making a variety of cocktails, but my favorite of the week is the Fall Classic that we made on Thanksgiving Day.

Bourbon, apple brandy, apple cider, bitters, simple syrup… What’s not to love?!

6. Turkey Soup

I knew I wouldn’t make it through all of the remaining food in time, so I put some of the turkey in the freezer.  I’m planning to use it to make a turkey and vegetable soup in the near future.

It was a wonderful Thanksgiving, followed by a fun week full of more good food.  I’m excited to host my next big holiday event!
